Beef Bourguignon & Red Wine

Lets make a Household favorite tonight. Everyone loves Beef and everyone loves mash potatoes. So Let me share my recipe for Beef Bourguignon. This is another Slow Cooker or Crock Pot meal. prep it, drop it in the slow cooker, and off to something else till it is ready. Wanna impress a guest ? Now Lets also pair a great dish with a Great Red Wine. This dish calls for Red wine. I chose a Merlot and not just any Merlot, but I chose the 2017 Ricord RRR Merlot from Our Wonderful Wine of the Month Club.

There is nothing better than pairing the right wine with your meal. Wine just makes everything better. With our Wine Club I get tasting notes with every delivery that tells me what my wines pair best with. Merlot & Beef is always a winning combination, and with the veggies and flavors in a Beef Bourguignon this should be an epic pairing.

So here are the Ingredients you will need:
1. 6 slices of Bacon
2. 2-3 lbs of chuck roast (cut them into small squares)
3. 4 cloves of Garlic
4. 2 carrots (cut into small chucks or sliced)
5. One white onion (dice or chop it)
6. one half cup of pearl onions (drained)
7. 2 cups of low sodium beef broth
8. 2 cups of dry red wine
9. 3 sprigs of thyme (1.5 teaspoons)
10. Salt & pepper to taste ( approx teaspoon of each minimum)
11. Corn starch

Now lets get all of this ready to go into the slow cooker, crock pot or pressure cooker.

Cut the bacon into a bunch of approximately 1 inch pieces. Smash or chop up your 4 Garlic cloves. Chop up the whole white onion. Chop or slices your carrots. Have the rest of ingredients close and ready to go.

  1. Get your frying pan hot over medium heat. Throw in the bacon and cook till crisp. When bacon is done, remove and place in a paper towel lined bowl… leaving all the bacon fat in the pan.
  2. Turn up the heat on your pan full of bacon fat. Throw your Beef chunks into the pan to sear them in the hot bacon fat. Cook to brown the meat well, approximately 2-3 minutes, then throw your beef into your slow cooker. Leaving that Bacon/Beef fat in the frying pan.
  3. Turn the heat on your pan back down to medium. Add your Garlic, onions and carrots to the pan of fat. Cook/Saute them for 5-6 minutes while stirring and getting all that fat and glazed material off the fan. soak it up.
  4. Add the bacon, garlic, onions, carrots, pearl onions, beef broth, red wine, thyme, salt & pepper, and bay leaves to the slow cooker.
  5. Cook for 4 hours on high or 8 hours on low.
  6. 15-30 minutes before serving this dish, create whats called a slurry with water & cornstarch to thicken it up. remove the bay leaf now.

Now lets get this Beef Bourguignon & Red Wine Dinner ready to serve.

Your choice here. Mash potatoes are my favorite, or you can make a bed of rice or egg noodles to serve this on.
Put a nice bed in the middle of your plate, Scoop out Beef Bourguignon with a large serving spoon and cover the bed of potatoes/rice/noodles.
