CREAMY CHICKEN AND BROCCOLI CASSEROLE

Recently, one of our Family members shared a Great Recipe with all of us on our Wednesday Night Wine and Dine Show. Stephanie loves to cook and loves to share her recipes with others. This time she shared a Fantastic Creamy Chicken and Broccoli Casserole dish that is simply put, Heaven on our taste beds. Below is her recipe, with pictures, and the Fine Wine from Direct to Consumer Ambassador, that she blessed us with.

Stephanie Says: make a Creamy Chicken and Broccoli Casserole that everyone loves

Making a home made dinner for my family is something that I enjoy doing. My creamy chicken and broccoli casserole is one of my family’s favorite meals. Trying new and easy meals are a fun way to try new and healthy foods. Getting your younger kids to eat their vegetables can be tricky, but with this meal they will love eating there broccoli… hopefully.

This chicken and broccoli bake is a yummy casserole that is delicious hot right out of the oven and even better heated up for for lunch or left overs the next day. I like to make a larger amount or double the recipe because its so good to eat the next day. I serve this bake over white rice or egg noodles or you can eat all by it self. This recipe can be made ahead of time and put in the oven when you get home But can also put together quickly.

Chicken and Broccoli Bake

Ingredients needed:

4 large boneless skinless chicken breast

2 bags frozen broccoli florets

3 cups mild cheddar cheese shredded

2 can 10.75 oz cream of chicken soup

1 can 10.75 oz cream of celery soup

1 can 10.75 oz cream of mushroom soup

1/2 cup of mayo

1/2 teaspoon curry power

2 tablespoon lemon juice

1 cup breadcrumbs (topping /optional)

Recipe can be served over white rice or egg noddle your choice.

What to do:

Boil the chicken Breast until it is no longer pink . Season the water with salt, garlic power, pepper, poultry seasoning and sazon (Spanish chicken seasoning) remove and shred the chicken with a fork and set a side.

Steam the broccoli or you can buy the steam in the bag it work either way.

In a large casserole dish layer the broccoli on the bottom followed by a layer of shredded chicken. Set aside

In a large bowl mixed the 4 cans of soup, mayo, curry powder, lemon juice and two cups of the cheese and mix. Pour the soup mix over the chicken and spread to cover all the chicken. Top with one cup of cheese and bread crumbs (optional).

Bake

Bake at 350 degrees for 30 minutes you will see bubbling and golden brown

( Place on a cookie sheet under the dish, it may spillover a little)

Cook the rice or noddles to serve over or you can eat it just the way it is…
