Eggs Benedict

This is my Eggs Benedict recipe. Personally I love this dish any time of day and for any reason. Most people order this (or make it) for breakfast. Me, I will have it for breakfast, lunch or Dinner.

My family have always enjoyed me getting up in the morning and making them this dish. My son, though grown and moved out many years ago, still loves for me to prepare this dish. It started as a Holiday favorite, then to a weekend favorite, now it is an anytime we can favorite.

It is such a favorite for me, that as I travel, I order it everywhere I go. Sometimes even decide on whether to return to that hotel or restaurant by how well they make my Eggs Benedict. Too often they will over cook, under cook, and even burn the Hollandaise Sauce. Everything is rather simple, but there is a fine touch to the Hollandaise Sauce.

Simple, Easy, Delish

An English Muffin, Canadian Bacon, and one pouched or over easy egg. Covered in a creamy Hollandaise Sauce. Those tastes just compliment each other and cerate a creamy sweet texture that I have come to enjoy and master for my loved ones.

You can take the time to make a good home made Hollandaise Sauce and I will share a recipe for that, But I find the Knorr sauce mix to be very satisfying. take 4 minutes and easy to follow directions.

For home made Hollandaise Sauce just get these ingredients Egg Yolks, luke warm water, lemon juice, Dijon mustard, unsalted butter, salt and some Cayenne pepper. Google the directions and be the chef you crave to be, but for me, I will use the Knorr sauce mix and be ready in four minutes.

So here is the path to a great brunch. Why did I choose to share this recipe today as a brunch ? Because today I will be pairing my Eggs Benedict with a great wine. Normally if someone was going to pair a dish like this they would choose some kind of sparkling white wine. A Sparkling wine like Champaign will cut thru the richness of the egg yolk. I have learned that other light white wines also pair well with egg dishes.

An Egg is not just for Breakfast

If I was making scrambled eggs with some light herbs I would pair it with a nice Pinot Grigio. You dont want anything with super bold flavors to over power your dish. A clean and fresh white wine is the perfect contrast to the egg yolk. A good Pinot Grigio is known for its subtle notes of Pears, Apples, and other citrus.

For my Eggs Benedict dish, I will be pairing a nice Sauvignon Blanc. This has aa nice acidity that pairs well with the creamy and rich Hollandaise Sauce.

Lets do it:
1. toast 2 English muffins and cover them with Butter.
2. warm up 4 slices of Canadian Bacon.
3. fry 4 large eggs over easy (or pouch them) in oil or butter
4. start your Hollandaise Sauce in a small sauce pan and follow directions on the packet

Pay attention to the directions. bring your mix to a boil, lower the heat immediately, keep stirring with your wisk until it starts to thicken, and then spoon all over your english muffin and bacon halves.

Now it is time to serve, pair, taste and enjoy a simple and delicious brunch. Before your first bite, stick your nose into your wine glass and take in the aroma. take 2-3 deep breaths. Now try your dish. no wine, just the eggs benedict. Enjoy that creamy sweet flavor on that english muffin with all those creavaces filled with butter.

Food and Wine Pairing is Luxury

Now take a scond bite and this time rinse your mouth with that beautiful Sauvignon Blanc. Notice how the wine highlights that sweet sauce and tastes like a citrus garnish. Wine is a wonderful addition to any meal when paired properly. Know when to serve the right white or the right red wine with the acidity or PH of your meal, can turn any meal into a great experience. I have even turned hotdogs and pizza into amazing meals my friends thought were amazing because of the right wine pairing. Experiment and read up when you can, and be the envy of all the cook outs and family dinners you host or attend this year.
